To use vertical text, add Chinese, Japanese, or Korean as a preferred language for your iPhone or iPad:
Go to Settings > General > Language and Region.
Tap Other Language or Add Language, then select Chinese, Japanese, or Korean.

With the document open, tap the More button in the toolbar, then tap Document Setup.
Tap the Document Setup button , then turn on Vertical Text.
Tap Done. All existing body text is automatically converted to vertical. Any new text boxes and shapes you add will also use vertical text.

When you use vertical text in shapes and text boxes, you can mix horizontal and vertical text in the same document.
Create a shape or a text box.
Select the shape or text box.
Tap the Format button , tap Text if necessary, then turn on Vertical Text. If a shape or text box already contains text, it becomes vertical. Any additional text you add is vertical.
Fit characters horizontally in vertical text in Pages, Numbers, Keynote
You can fit two to four characters horizontally within vertical text so they can be read from left to right. This can be useful for Latin characters such as numbers. Trillium for mac.
Select up to four characters you want to rotate.
Tap the arrow button if one appears in the menu, then tap Rotate to Horizontal.
